Super easy and quick to make, light and fluffy, simply delicious. These healthy muffins are made from frozen berries, and are great for breakfast, with your cuppa as a healthier alternative to traditional muffins or they are great after your exercise. To add extra proteins, just have a glass of kefir, milk or small yogurt with them.

For 12 muffins you need:
75 g honey or coconut sugar
75 ml olive oil or rapeseed oil
– 1 tsp vanilla paste 2 eggs
– 200 g gluten free self-raising flour or organic self raising flour
– 150 ml plain yogurt
50 g desiccated coconut
125 g frozen berries ( go for your favourite berries) I used strawberries and blueberries.
1. Preheat the oven to 200 °C/fan. Meanwhile, line a 12-hole muffin tin with paper or silicone cases.
2.Place all the ingredients except the berries in a large mixing bowl or food mixer. Mix together until well combined. Carefully fold in the berries as a last ingredient.
3.Divide the mixture among the muffin cases and bake for approximately 20 minutes until the muffins are risen and golden. Allow to cool. They will keep in an airtight container for about two days.
